Tomato is one of the most cultivated and consumed vegetables in the world due to their relevance in food and confectioneries. Unfortunately, most of the tomatoes produced are wasted as a result of postharvest loss and quality deterioration. This then implies that production resources such as land, water, energy, fertilisers, labour and effort are wasted, and ultimately, profitability for growers is reduced. Postharvest losses are often higher in warmer, more humid climates.

Feeding the burgeoning world population may be difficult if postharvest loss is not addressed using the right technology.
To address this loss and improve growers’ profit, the technology of peeled whole and diced tomatoes production was introduced. It is now possible to have whole peeled or diced tomatoes in tin cans.
Peeled whole tomatoes are entirely not broken or rotten tomatoes from which skin has been completely removed, obtained from well ripe tomatoes, having red sharp colour, from suitable varieties; final product to be free from skin, seeds and topped with natural or semi-concentrated tomato juice. However, diced tomatoes are obtained when whole peeled tomatoes are cut into cubes using a dicer.

Producing whole peeled and/or diced tomatoes require a processing machine line for whole peeled and diced tomatoes and another tomato paste processing line. It should be noted that production of these products require huge amount of capital, constant raw material supply (from own farm and/or out-growers) and steady power supply however, it’s a good and profitable business for big investors, organisations, companies, cooperatives, Government and private individuals.
To produce whole peeled and diced tomatoes, you need to produce or buy from supplier paste of tomatoes first. The paste is canned in aseptic drums of 200 litres and can remain canned till two years till when you decide what to do with it. This paste is reprocessed to produce light sauce in which the whole peeled or diced tomatoes are canned.

The capacity of this machine line ranges from 150-300tons/day fresh tomatoes. However, to maximize huge and fast profit, a minimum of 300tons/day fresh tomatoes is recommended. Moreover, 300 tons/day fresh tomatoes are needed for tomato paste line. Another important consideration is that peeled and/or diced tomato processing must always take place alongside the production of tomato paste. It is not worthwhile to produce only peeled tomatoes as the grading and sizing waste products (which may be as high as 30%) together with the peeling process waste (about 10%) which must be recovered and used for the production of tomato paste. This is why tomato peeling and paste lines always work side by side.
